Thank you for visiting the Spruce website. Usually this section is to tell you more about myself. However, what matters most is that you know that everything we do at Spruce is filtered from my numerous travels, experiences and feelings on a how a restaurant should be. My cooking has always been about simplicity and the quality of raw products. The food at Spruce is no different, I give great respect to the produce, craft and technique of cooking and what ends up on the plate is food that is cooked with the utmost care. It is true that I am American, but my cooking is influenced by the flavours and smells of the Mediterranean, North Africa and continental Europe. It also pays homage to my humble American roots, woven with intrigue from faraway lands where only my imagination can take me. Please feel free to introduce yourself the next time you are in, I would love to meet you. Cheers and have a great time around the table.

I am an avid food lover whose dream was to one day own and operate a restaurant of his own. With no prior experience in the F&B business, I took up the challenge and left an IT job after 14 years of service. The biggest challenge for me was to quickly learn the trade and be able to provide the our signature Spruce hospitality to every guest. I look forward to welcoming you to Spruce, please enjoy.
